The member of the nightshade family gets its genus name, Capsicum, from the Greek word that means “to bite,” while the common name is borrowed from the capital city of French Guiana. Although the powdered herb is most commonly used as seasoning, it is also incorporated into topical salves. The phytochemical that lends them heat when ingested also thwarts pain. The primary agent in chili peppers is capsaicin, a compound that protects the plant from fungal disease, insects and herbivores. Capsaicin targets and bonds to a receptor in sensory neurons called transient vanilloid receptor subtype 1, also known as the capsaicin receptor. When stimulated, these receptors permit specialized molecules called cations to permeate cells, which modifies the electrical charge of the cell. When this event is signaled to the brain, it is interpreted as pain and burning sensations at the site. This is why capsaicin is used in pepper spray. It is said that cayenne pepper can aid weight loss by boosting metabolism. Drinking lemon and cayenne pepper mixed with water can radically reduce heartburn and acid reflux. For years, people have sworn by the effects of cayenne pepper on a cold or sore throat. For sore throat, you can make a drink that tastes like spicy lemonade using cayenne pepper, lemon juice, water, and maple syrup. The pepper is thought to help boost immunity.  It is high in vitamin C and antioxidants that help to keep infection under control. Cayenne pepper also works to keep the blood circulating efficiently in the body. It can be applied to frostbite and gangrene to help draw blood to the affected areas. Some people have even been known to put cayenne pepper in the bottom of their shoes in order to keep feet warm on an icy day. If you’re taking other herbs, you may want to add a little cayenne pepper to your formula. That’s because cayenne will actually help your blood absorb other herbs more efficiently and help them to deliver their own punch. For first aid, cayenne pepper is also helpful. Capsicum annuum is in the Solanaceae or nightshade family . It is an upright perennial or annual shrub that grows to heights less than 1 m tall. The plant produces with small, white, pendent (hanging) flowers and elongated, yellow, orange or red fruits (berries). Its flowers help distinguish the plant from other types of domesticated peppers; rather than appearing in groups the flowers are solitary, and its filaments (thread-like stalks supporting the anther) are not purple. Chili pepper plants prefer full sun in a warm climate, these plants are mostly perennial in sub-tropical and tropical regions; however, they are usually grown as annuals in temperate climates. It prefers warm, moist, nutrient-rich soil. Start seeds indoors and sow ¼ inch deep, 8 to 12 weeks before the last frost. You can pre-soak seeds in warm water overnight prior to planting. After planting, keep moist and warm in a sunny location. Good results are also achieved by putting plastic cling wrap over the containers to create a hothouse environment. Remove when seedlings emerge. Harvest when peppers are red for hottest flavor and if you plan to crush or grind them after drying. You can harvest and use the pepper fresh, when it’s green, but the flavor may not be as hot. To dry, use a threaded sewing needle (can use thread or fishing line) to string hot peppers through the stem. Hang in full sun. To freeze, first wash thoroughly and let air dry or pat dry. Remove stem but leave the seeds in. The peppers can either be frozen in containers or plastic bags and they will taste “fresh” any time you eat them. To make crushed hot peppers, preheat the oven to 250 degrees/broil. Put dried hot peppers into the oven in a pan or on a sheet of tin foil. Roast until peppers just start to darken (about 5 minutes). Let cool and put in blender. Crush to desired size. All dried forms may also be ground into a powder. Store dried peppers or powder in a cool, dry place in an airtight container. Symptoms of internal toxicity include: heartburn, anal burning, and gastric erosions, digestive upset, and diarrhea. Internal toxicity may occur if ingested in quantities greater than the therapeutic doses away from food. May cause transient increase in heart rate and blood pressure. External adverse effects may occur if extracts are highly concentrated in capsaicin and are applied for a prolonged period of time. Adverse reactions to topical application include: burning, stinging, erythema, heat, pain, and with prolonged use may cause permanent loss of sensory nerve function in the area of application. Avoid application to eyes and/or mucosal membranes. Avoid internal use in active duodenal ulcer, GERD, acute diarrhea, acute cholelithiasis, and severe hypertension. During pregnancy doses should not exceed normal dietary levels, and caution should be used during lactation. Avoid in allergy to Solanaceae family. Should be reserved for use when significant stimulation is required. Is indicated in gastric and digestive insufficiency, but relatively contraindicated in ulcerations and inflammations of the digestive tract. High doses have been shown to increase the activity of two hepatic enzymes in rats (glucose-6-phosphate dehydrogenase & adipose lipoprotein lipase), thus the hepatic metabolism of some drugs may be affected. Use caution with concomitant use of MAOIs, anti-diabetic agents, anti-arrhythmics, anti-hypertensives, and ACE inhibitors (may increase cough even with topical applications). Avoid concomitant use with cocaine. Internally could theoretically potentiate anticoagulants (may decrease oral bioavailability of aspirin), and increase drug level of theophylline.
