Botany, Cultivation & Harvesting: Galangal is native to South Asia and Indonesia. It is cultivated in Malaysia, Laos, and Thailand. Galangal plants grow from rhizomes in clumps of stiff stalks up to two meters in height with abundant long leaves, and bears red fruit. It is a perennial herb. The leaves are 25-35 cm long, with rather narrow blades. The flowers at the top of the plant are small, white, and streaked with deep red veining. The rhizome resembles the shape of ginger, but is much smaller. Some have a dark reddish-brown skin and nearly white interior. They are tough and difficult to break. Galangal can be grown from rhizomes or root pieces, in a warm climate or in cooler climates with protection. It prefers well-drained, nutrient-rich, slightly acidic soil with a lot of organic matter like compost or wood chips. These can be mixed with topsoil. Galangal plants require soil temperatures of 68-86°F to produce shoots, and cannot survive below 59°F. In late summer, temperature fluctuations can be problematic. A heated greenhouse can provide ideal conditions, or it can be grown in pots in a sunny conservatory. Outdoors, it prefers a bright, semi-shady spot. Rhizomes should be planted 4-8 inches deep in early spring after the danger of frost has passed, with the growing points facing up and 8-12 inches apart. If the rhizomes are too large, you can cut them into chunks with at least two “eyes”. Larger pieces will produce bigger rhizomes at harvest time. When planting, protect the young plants with a layer of mulch. Water regularly during the growing season to keep the soil evenly moist but not wet or waterlogged. Water deeply in the early morning or late afternoon and avoid watering the leaves to prevent fungal disease. The rhizomes can be harvested most of the year. They are more tender when they are young and actively growing with white skin. You can carefully dig at the side of a clump and remove rhizomes as needed. Dried Galangal root can be cut or powdered, and should be stored in an airtight container in a cool, dry place. Contraindications & Toxicity: Do not use if pregnant or nursing.
