Ghost Pepper average about 1,000,000 SHU (up to 2,000,000) on the Scoville Heat Scale (avg 1/16 of pure capsaicin), compared to habañero that has up to 350,000 SHU and jalapeño that has around 8,000 SHU. In 2007, Ghost Pepper was formally dubbed the hottest chile pepper in the world by Guinness World Records. However, the title was later superseded by the Trinidad Moruga Scorpion pepper in 2011, the Carolina Reaper in 2013, then the Pepper X in 2023. In Assam, Ghost Pepper is known as Bih Zôlôkia, which translates to ‘poison chile pepper’. Ghost Pepper is often used in military-grade pepper spray and hand grenades to control rioters and disperse mobs. In 2015, grenades made from Ghost peppers were successfully used by the Indian Army to flush out a terrorist hiring in a cave. In northeastern India, the peppers are smeared on fences or incorporated in smoke bombs as a safety precaution to keep wild elephants at a distance. It is 170 times hotter than Tabasco sauce. The heat is blinding nova-level, but in small doses it offers a very intriguing tingle that mixes well in chili recipes, salsa, sauces, soups, marmalades, milk-based dishes and desserts, and chocolate desserts. Just a pinch, literally an extremely tiny pinch, is more than enough for any dish. Ghost Pepper derives its pleasantly sharp appetizing flavor and extreme heat from capsaicin and other capsaicinoids. Unlike most peppers, Ghost Peppers produce capsaicin in vesicles not only in the placenta around the seeds but also throughout the fruit. Capsaicin contains antioxidants called phytochemicals that lower free radicals in the body and can prevent illness. The heat from capsaicin-containing peppers has been used to help clear nasal passages for people with sinus infections. Some studies have shown that Ghost Peppers can provide relief of migraine and headaches, and even ease arthritis symptoms. The capsaicin found in Ghost Peppers also kills bacteria that causes stomach ulcers, easing associated abdominal pain, discomfort, and diarrhea. Like all hot peppers, Ghost Peppers can help speed up metabolism, which may contribute to weight loss. It has also been shown to increase energy expenditure and fat oxidation, which may also help with weight loss. To ease pain associated with ingesting too much Ghost Pepper, drink a glass of MILK (NOT water or alcohol) and/or eat some ice cream. Eat some bread or other carbs. Alternatively, drink something acidic. The burning sensation generally intensifies over 10-15 minutes and starts to subside after 30-40 minutes. If burning results from contact with the skin, immediately wash with cold water and dish soap several times, then soak in milk, or even yogurt, sour cream, or ice cream. Be extremely careful to avoid contact with the eyes. But if you do touch them, soak a towel in milk and hold it on the eyes. Other ingredients sometimes found in these powders are salt, black pepper, sulfur, even snake shed, fire ants, wasp’s nests, and graveyard dirt. These are variations of a traditional West African HooDoo powder called ‘walkin foot’. This was used to control a person’s movements and included dirt from a person’s foot tracks, then was ritually sprinkled into or on their shoes and into their foot tracks to guide them into a different direction. Hot Foot, or “Walkin Foot”, powder was also placed into a bottle, along with a piece of paper with the enemy’s name written on it, then thrown into the river to guide them away. Botany, Cultivation & Harvesting:  Ghost Pepper is a hybrid chile pepper originating from northeast India (specifically Assam, Manipur, and Nagaland). It is a hybrid of Capsicum Chinense and Capsicum Frutescens. The plant height varies from 45-120 cm (17 – 47 inches). Leaves measure 10.65-14.25 cm in length and 5.4-7.5 cm wide. The ripe Ghost Pepper fruit measures 6 – 8.5 cm (2.4 – 3.3 inches) in length, 2.5 – 3 cm (1 – 1.2 inches) in width, with a slight taper, and the most common variety ripens from green to red (more rare varieties to orange, yellow, or chocolate). The texture of the skin is wrinkled and pocked. Ghost Pepper pods are unique among peppers because of their characteristic shape and very thin skin. In peak growing season with ideal conditions, just 1 plant can produce as many as 200 individual peppers. Ghost Pepper is best grown in climates with high heat and humidity. The seeds are planted about 2 feet apart in warm soil and full sun, take about 35 days to germinate at 32-38°C, and about 100 days to mature from the time they are planted. When the peppers turn from green to red (or another bright color), they are ready to be harvested. Harvesting must be done with extreme care because of the heat of the fruit.
